When it comes to breakfast, I keep it simple. I pretty much eat the same thing everyday. Pineapple and some kind of berry topped with greek yogurt and homemade granola.
Whether you’re making brunch for friends or overnight guests, serving homemade granola can be very impressive and fortunately for you, incredibly simple item to make.
Granola is one of those recipes that you can customize based on your taste. Below I have provided my recipe but feel free to throw in additional ingredients like different nuts and seeds. Just be careful to add any dried fruit after baking as it will get harder or burn in the oven.

Homemade Granola

Ingredients

  • 2 cups quick oats
  • 1 cup shredded or flaked coconut
  • 1 cup sliced almonds
  • 1 cup chopped pecans
  • 1/2 cup sunflower seeds
  • 1/4 cup flax seed
  • 1/2 cup olive oil or vegetable oil (I prefer the taste of olive)
  • 1/2 cup pure Canadian maple syrup
  • 1/2 cup dried cranberries or cherries (optional)

Directions

Set your oven to 350°F. Mix all ingredients in a large bowl with a spoon excluding the dried berries. Spread the mixture evenly on a lightly greased or silicone covered sheet pan and place on the middle rack in your oven. Bake for approx. 8 – 10 minutes then stir the mixture using a flat spatula. Be sure to mix the outside edges well into the middle to prevent burning. Bake again for approx. 8 minutes or until the mixture is golden brown. Remove and cool on the pan for about 20 minutes. Store in an airtight container in room temperature.
